Ginger Dressing

1/2 cup extra virgin olive oil
1/4 cup orange juice
2 tbsp balsamic vinegar
2 tbsp fresh ginger, finely grated
1 tbsp soy sauce
1 tbsp honey or Dijon mustard
4 tsp liquid stevia
1 clove minced garlic
2 scallions, chopped
Makes about 8 servings. This is great as a marinade and as a dressing. Fantastic over greens, with mandarin orange slices, homemade croutons, and slivered almonds.
