Lemon Vinaigrette

3 tbsp fresh squeezed lemon juice
4 drops liquid stevia* or 1 tsp agave nectar
2 tbsp finely minced red onion
1/2 tbsp lemon zest
Pinch of sea salt
1/4 cup extra virgin olive oil or virgin coconut oil (melted if solid)
Makes about 8 servings. Great as a dressing on a spinach salad with tomatoes, cucumber, avocados, etc; or as a marinade for chicken.
